British Ale James T Perkins 6 April 2001 This is a favorite fast ale. I wanted to go for something a bit lighter than my usual dark malt flair. Something classic and English, along the lines of a bitter or a mild pale ale. This combination of speciality grains will give a light, classic flavor (Crystal), a Biscuit aroma and taste (English Special Roast), a drier crispiness (Extra Light extract), with a rich woody and earthy aroma (Fuggles and Goldings, kept more toward the end of brewing). Thanks to Kevin Lopez at http://www.mainbrew.com for this recipe! Ingredients: 10 oz. Crystal Malt 20L 16 oz. English Special Roast (Biscuit) 7 lb. extra light malt extract 2 oz. Fuggles Hops 2 oz. Yakima Goldings Hops Wyeast London Ale Liquid Yeast Hopping schedule: 1.5 oz Fuggles for 60 min. 0.5 oz Goldings for 25 min. 0.5 oz Fuggles for 15 min. 1.0 oz Goldings for 10 min. 0.5 oz Goldings for 2 min. (or dry-hopped) O.G. 1.055 F.G. 1.0?? (1.020 on April 10) (1.015 on April 16) And the winner is.... Yes, turned out great. Medium body mouthfeel, good firm head. Nice woody/earthy aroma. A bit cloudy since I bottled out of the primary fermenter. I look forward to seeing how it matures over the next month. A month later I wish I had made twice as much! Yum! On a retry of this recipe, I did not leave the specialty grains as long as I wanted, because I wasn't watching and they got too hot to steep. My Starting Gravity was 1.048 (probably from the lack of steeping). My finishing gravity after 10 days was 1.010.
